Redfish, not so much. Even tried it blackened at K-Paul’s.

Yes. You can’t bring them out of the water because their skeletal structure can’t support their body mass. If you pull them out of the water, you’ll injur them and likely kill them.Because their numbers are so low?
My favorite is Wahoo. I like Amberjacks as well. The local fish up here on the bay (Stripers, known here as Rockfish) is one of the better ones I’ve had as well. Makes the best Fish Tacos of all I’ve cooked. Grouper is up there, as is snapper. Corvina makes a great ceviche.Wasn’t that fish once called a jewfish?
