500lbs is a regular catch in the gulf?
That is on the larger side. But Grouper is a huge fish. Unfortunately like other seafood, it is overfished and rarely you see large ones like that.

You go to any good Aquarium, they will have one or two huge groupers in their tanks.

The **** are you talking about? That was a Goliath Grouper, it’s not overfished, it’s protected. You can’t even bring the damn things out of the water, legally. Catching these isn’t that much of a sport, you drop a leather boot down and they’ll eat the damn thing. It’s just a mater of whether you can pull one up to get the pic.

There are a ton of species of grouper and they aren’t overfished. The ones you’re allowed to keep (this one isnt one of those) are tightly regulated and have been for decades. They are a bottom fish, so there isn’t a concern of gilnetters fvcking up the population.

And looking up facts, yes the Goliath Grouper which I didn't even know was a sub-species of the fish was protected in 1990 and 1993 due to over fishing. So, they were over fished and the species of Grouper that is being served is still over fished per many reports.

I guess if you use the logic that due to a fish being regulated that it constitutes being overfished ergo, it’s regulated to ensure it’s not overfished. I can buy that argument, makes sense. Saltwater fishing is one of the few places where I’m a huge conservationalist. Whatever the regs are for the species, I usually half them with respect to my boat and will only kill if I know we’re going to eat it. I’m all for preserving the resource.

A decade ago when I was involved in the restaurant industry and I still follow the going ons as I have many friends still in the industry, it was impossible for us being a chain restaurant to get certain fish on our menus. Grouper, redfish, sea bass and several others were practically untouchable for a chain restaurant. It just wasn't feasible. I've seen our Executive chef bring in a grouper a couple of times to test recipes and the fish was huge. Not 500lbs so obviously not a GG, but still the biggest fish that I've seen in a corporate kitchen.
