For those of us who got our great tans from our Native American ancestors, what’s a kibbeh?
Lebanese meatball. It’s essentially ground meat (beef or lamb), wheat, onion and spices. I’ll eat it raw too against my mom’s wishes.

OT slightly, guilty pleasure in our house was the frozen Salisbury steaks.

Some moron at the Salisbury steak factory changed the recipe and shrunk the portion though, so that bit of reminiscing is gone.

Fried deer steak with a wine reduction and gravy over rice. She was a terrible cook, but some things she could do. Worst was a near-raw stuffed green bell pepper full of tuna fish and raw onions. I'd probably be taller with better cooking.

My mother’s great aunt made amazing chicken and dumplings. Before she died, my mom spent a weekend with her for the main purpose of learning to cook that meal. Definitely my favorite thing mom cooks.
My wife makes better chicken and dumplings than my mother did and hers were excellent. I feel safe saying that now that she’s dead and buried. Had I said that publicly while she was alive I would have had to live in fear of being whacked by a wooden spoon.

My wife is an excellent cook, but her chicken and dumplings are not on the same level. It’s a delicate situation whenever one of them cooks their version.

Used to work with a guy from the delta that brought it to work all the time. Swore it was safe to eat raw. I never tried it.

oh wow....... momma had a unique way to do red beans and rice, just different with this "gourmet" touch.
her cranberry sauce
her dressing at thanksgiving
whenever she made meatloaf
and she would do a skillet hamburger, with the bun steamed on top, and she would peel the tomato, and the lettuce was just right......

she has been gone about 13 years now, and what I would give for just one more meal

***fellas that still have parents in this world, value them and spend time with them, and if things aren't right, then make things right. One day they won't be here and you don't want any regrets....... and I am lucky b/c she left the world unexpectedly and there was never anything left unsaid

Fried chicken, purple hull peas, butterbeans, fried okra, fried squash, mashed potatoes, green beans, cornbread. Mixed and matched, not necessarily everything at the same time but variety was never lacking on Sundays. I'd say purple hull peas and fried okra were always part of the rotation if the okra crop was good that year. I hated harvesting that garden and shelling peas and beans plus snapping green beans but damn the meals were good growing up.
This is accurate for me, too. Rotate in a meatloaf for chicken for 1a.

After my parents got divorced and it was just my mom, my brother , and I, we would get little caesars every Friday and rent a movie and watch it. I was a scared kid, but every Friday night the world was okay. Honestly, those are the best meals I’ve ever had.
I've always thought that families need a pizza night (or whatever food) the same day every week. It bonds people, starts a tradition and certainly brings about comfort.

Still remember my mom pounding a round steak with the mouth end of a Coca Cola bottle. Wasn't my favorite but I always knew when we were about to have it!

Quick answer, Raw ground beef that crazies tell you is ok to eat. “The spices kill the bacteria”. I’m good. It’s nasty. But try it!!!

I don’t know about favorite, but my least favorite was her roast. Loved the carrots and potatoes with it, but the meat was always so damn dry.

it would be hard for me to choose any one thing, but I hit the daily double because my grandmother lived down the street and as good as my mom could cook, my Mamaw made her look like a rank amateur. My friends would beg me to call her and ask her to cook for us, which she loved doing. It was all vittles, good old country cooking and everything came out of our garden.

Sausage pinwheels for breakfast. It was just bisquick biscuits, ground beef and cheese in a spiral, but it was delicious

Meat loaf, black eyed peas, Mac and cheese and cornbread
Awesome thread.

My mom made a really good homemade spaghetti that I haven't found anything else. My wife got her recipe and it's close, but can't figure out what's off.

Side note: I never had a non-well done steak until after I graduated from State. My mom thought if it wasn't well done, it wasn't safe to eat. When out to eat, ordered well done steak.

My first business trip out of college, I am in Las Vegas with my boss and I order a well done steak. My boss pretty much said that he wasn't paying $75 for a well done steak and I should order it medium. I did and I called my dad that night - he said his was always medium but never told my mom and he just assumed I liked them like that. I have two brothers - one still eats his well and the other will go rare. I am medium rare/medium.

On Sunday’s one of her go to’s was fried chicken, rice & gravy, lima beans and homemade biscuits. Other times she would cook a pot roast, potato salad, fried okra, black eyed peas and corn bread. I’ve never had any potato salad as good hers since. For desert she would bake great Carmel cakes and mandarin orange cakes. Boy…..I miss those Sunday lunches.

I think as a group we may underestimate the sketchiness of meat in the days of our parents and grandparents.

Seems our moms had overcooking beef and pork in common.
