Daughter has a Xcountry meet till 2ish so that rules out any early cooking or cooking during the game. So instead I'm cooking some Chicken and Sausage gumbo tonight for tomorrow evening. We'll probably do some boudin for appetizers.

First attempt at smoked whole wings tonight along with sausage/chs plates.
Spare ribs, tips, toasted ravioli, and smokies tomorrow.
Beef tenderloin and smoked twice baked potatoes on Sunday

Meat overload? Yes. But is it opening weekend for SEC football? Also yes, so I don't care

Malcolm also has that on his How to BBQ Right website. I don't use a pan, but shape the meatloaf and make a tinfoil "boat" that I place it in and put on the smoker.

This reminds me a little bit of that dirty roast beef we used to get at Sal and Phil's, but they did the crockpot method.

Trying Malcolm’s next time I smoke a meatloaf. Also want to try Melissa Cookston’s recipe.

My wife coached xc for the last 5 years, and as much as I loved going to support her, I hated missed the large majority of my Saturday's, especially with me usually getting home no earlier than 11 after coaching Friday nights. But, she resigned after last season to be able to spend more time at home and with her basketball team. So excited to have a whole football Saturday to cook, watch, and drink.

Gonna try wings on the WSM. Was planning on Jalapeño Popper chicken chili, but I don’t think anyone is up for the prep..In 2014 we made chili the night we beat LSU...so we had to have chili every game day going forward.

Lucky you. My daughter played travel soccer for the past 6 years and decided during the covid hiatus from soccer that she wanted to do something different. Started running with high school this summer and put up some good times in her first meet, now we're traveling doing Xcountry. She's in 7th grade so I'm maybe 5 years away from free Saturdays for football and hunting.

Talk me about that smoked queso

Hi hun - white velvetta / rotel (drained) / jalepeno / browned chorizo / chopped onion...put all in a foil pan in smoker at 250 stirring every 30 minutes....won't take long...maybe 2 hours. take care.

so at least with cross country you have time to kill for a while. if you got good cell service and travel grill you can tailgate and watch the game while you wait for the race to be over.

Gumbo - 4# of shrimp, 1# of lump crab, and 1# of crab claws. And lots of beer. I mentioned to a coworker earlier that my wife gives me 2-3 “*** on the couch” weekends per year and this will be one of them. Man, I’m so pumped....
