Memphis is up on the schedule , so it's pulled pork and ribs this week

LA Tech - Anything goes (Winner - klc90)
NC State - Anything goes (Winner - PBRME)
Memphis - Pulled pork and/or ribs
LSU - Cajun
A&M - Beef
Bama - Anything goes
Vandy - Anything goes
Kentucky - Chicken, bourbon
Arkansas - Pork
Auburn - Seafood
TN State - Anything goes
OM - No contest (Thanksgiving)

I will be out of pocket most of the day Saturday due to a birthday party, but I'm planning on putting a butt on the smoker tonight, and then maybe this week I'll actually remember to post some pics after the game. We're a house divided this weekend as my wife is a Memphis grad, so I'm probably kidding myself when I act like the whiskey won't be flowing by 2:30.

Pulled Pork Chili (Gonna be cold and rainy this weekend)
Pulled Pork and Provolone Grilled Cheese on Texas Toast
Homemade Blue Cheese Cole Slaw

And we're off... First smoke at the new house in the mountains. Just gotta make sure I don't become one of those guys on YouTube fighting off a bear from his grill.

Won’t be defending my title this weekend. Was going to make rib sandwiches to be a little different, but the wife wants pork chops.
Picked up some pork streaks(technically they qualify), and center cut loins

pork steaks seasoned with BNO spicy white lightning, and honey sirarchi. Then glazed with apple jalapeño

loin seasoned with the bbq rub and glazed with sweet baby Ray’s sweet and spicy.

sides are simple. Loaded baked potato and salad

I won't be back to the house until almost gametime, so no entry from me this weekend. But I've got a brisket in the freezer for A&M.

Don’t mean to get off subject, but what kind of construction is that retaining wall? Unique. Looks like poured in place concrete with stain and the embossing was cut in?

Funny enough I asked the builder. The house was a custom build for a couple from Alaska finished earlier this year, but they over spent and decided to sell

The wall is cast in place with a 3' wide footer about 4' deep. The concrete was colored with pigment in the truck so it's solid throughout. The little detail was formed with a chamfer in the forms the same way you would with commercial tilt wall.

Not the exact design and colors I would have chosen, but it's a tank of a retaining wall. Builder said it was $60k for just the retaining wall.. Wonder why they went over budget?

What’s up Bitches!!!! Finally have a weekend watching futbal de Norte americanos vs 10 year old girl futbal. It’s raining so I didn’t want to do a long smoke so just opted for ribs one Memphis, one NC pepper vinegar, smoked queso, and baked beans. Drinking some Tito’s and OJ in the morning, gonna move on to Larceny around kickoff.

This is ribs week- bacon covered ribs

Cooking bacon-covered ribs at 280 for 3 hours. After they're cooked, will turn the oven up to 400 degrees, and am roasting cucumbers, onions, and peppers. Also have cheese-stuffed Jalopenos and biscuits.

Using Memphis bbq from HEB

Did you use country-stle ribs or chop up spareribs or babybacks? Looks great.

No. The cure and seal on the patio didn't take properly do it's dark and light in areas. Behind the wall is dirt (Landscaping coming in next week.)

Though we do have a chance of snow showers tomorrow night.

Used babybacks

Cut the slab last night, rubbed them down with rib rub, wrapped them in bacon (using toothpicks), then let them set in the refrigerator overnight.

Set the oven to 280, then cooked them for 3 hours. Then I put the (heated) BBQ sauce while turning the oven up to 400. After 10 minutes, took them out and removed the toothpicks.

First time I tried it, came out much better than I expected.

Sorry guys, I got caught up in birthday parties and well…. pissed off-edness on Saturday, and threads like this quickly got shuffled down to page 2 a few times while everyone vented.

Anyhow, as mouth watering as Hotmop’s brisket and a few other items looked this past weekend, the victory goes to mcdawg22 for sticking with the theme and making a couple fine racks of ribs.

With LSU coming up, it’ll be a very loose interpretation of a Cajun theme this weekend, so get your boudin, jambalaya, and gumbo recipes dusted off.
