Poke is great. When I am in Hawaii I can't get enough of it. Go to the local farmer's market, Waimea on the Big Island is my favorite and the one in Pukalani on Maui is pretty good too. Get some fresh fish and fruit and don't forget some malasades (fried Portuguese donuts). Stop at just about any mom and pop grocery store. Most of them all have good poke. Get some chick and kalbi ribs to grill. Nothing better.

Not "really" raw as it uses lime juice or some other acid to "cook" the fish etc iirc.

You're thinking ceviche where the lime / citrus juice chemically cooks the fish / seafood. Poke typically has no lime juice but can have rice vinegar added sometimes which is an acid.

Here are some pics where you can see the fish has been chemically cooked and turns a white / translucent color. It is served as a dip with crackers or chips or as a topping on tostadas.
