OT: Meat Question, brisket

Midstate Meats in Monroe Twp. is also closed - sometime around the beginning of Covid.

I've long conceptualized something like a "meat emporium" - a small supermarket-sized space with a butcher counter, poultry counter, deli counter and a fish counter, along with coolers stocked with prepackaged product.

Any meat from before the thread was necroed, 2017, has probably gone bad by now, don't‘cha think?

This brisket came from a 3/4 cross bred Wagyu cow. I had the sirloin already and it was like eating filet mignon. I'm telling you guys, local farm bought blows local butcher or what you think is the best butcher away.

I stand corrected. But, by now, wouldn't constantly trimming off all the moldy bits have reduced a whole cow to a toothpick sized piece of very tender beef? Imagine the prices on that tidbit.

We had them and will again. Only so much we can tackle with my wife's full-time job in Pharma and me running my own business. The hobby became more like a full-time job, so we had to cut back and cows seemed to be the most time consuming.

Yes, the grounds and maintenance department preformed their job admirably, however the animal care department could not equal our excellent performance. I heard Utah in the summertime is quite nice. Might be something to ponder further.

In all seriousness, I expect an enormous leap in customer-facing AI in the next few years.

I think that by 2025 all the bits will have come together so that, when I start outfitting my retirement cruising sailboat we will have at our disposal:

• More efficient electric motors (incidentally, the current technology used by absolutely everyone was initially developed by GM about 25 years ago)
• Much more efficient batteries
• More efficient solar panels & wind generators
• Global coverage for high-speed internet
• Advanced consumer AI (think Alexa)

Such that a cruising sailor would be able to wake up in the morning, check weather and course and tell the onboard electronics (Alexa-compatible) to check the latest weather & wave / current info and set the most direct / fastest course to a place 1000 miles away and the automated features would do the rest: unfurl / trim the sails, maintain course, monitor the charge state of the batteries and start the generator when necessary, keep tabs on the climate system, the galley systems and the watermaker, run the infotainment systems as commanded, maintain communications with onshore folks, etc.

All while using nearly zero fossil fuel.

All of these individual systems already exist, mind you. All that's required is integration and arbitration.
