I need 6-7 pounds of brisket for a family holiday dinner (brisket with carrots & onions, etc)...

Where’s the best butcher for such an order, southeast Morris County or Monmouth County areas...

Kosher desired but not required!

I like Midstate Meats. It's on Spotswood-Englishtown Rd. in Monroe Twp., just a half mile or so from the Spotswood border.

SE Morris County- A&A Fine Foods in Lincoln Park.
Market Basket in Franklin Lakes (Bergen County) about 10 minutes north on 287.

Speaking of brisket.. I saw some Food Channel show called Diners, Dives and something where some guy was cooking beats in what would normally be a brisket spiced pot. This will be for beet sliders. He ends up cutting disks.. searing them on a flattop.. to put on buns with some sauce.. I'm gonna try this sometime.. but here is the recipe Customers were raving about it.. I am curious.

Green Village Packing Co in Chatham (near the ShopRite on Shunpike) is where I buy whole pigs for BBQ. They’ll do any cut of meat for you.

However at 6-7 pounds you seem to be looking for a plain, flat cut i would just get at Costco or grocery. No reason to get from a butcher like you would go for a whole 13+ pound brisket.

Perotti’s in Basking Ridge isn’t a butcher shop. Is a high priced deli and caterer. Totally not worth it if you will be cooking it yourself.

Sussex Meat similar to perotti’s in that it’s more of a specialty meat and deli market (like Barths in New Prov) and not a true butcher.

Yep. My local go-to place for some things. Also lower prices than typical markets and chain grocers.

But as stated you’d be fine getting a standard, flat 6+ cut at Costco. I wouldnt hesitate to do that

Wayne Meat Corp. on Hamburg Tpk. - never got brisket there, but have had great success with other cuts of meat from there. An added benefit is you can swing by for a well aged single malt scotch or two!

Not sure what exactly went down, but there was yelling on the radio so it must have been good.
Always hard to tell from pictures, but it looked like small potatoes. Will check in with CM or the incoming 66 later.

My specialty was always not yelling on the radio. Like the time I rolled up on an unmitigated disaster on 33 and said to Tink, "Yeah... so... I'm just gonna need some fire trucks and stuff."

Shoprite, they are the Honda Accord of supermarkets. Look for coupons, The dog won't eat the meat they sell there but it should be good enough for the inlaws.




(WARNING: I never shop there and I don't own a Honda Accord)

That's 'cause you were a pilot and being understated is a required skill for flying.

Although I have noticed that my youngest, the part-time EMT & Firefighter, has developed quite the capacity for understatement too - and he's not a pilot. In his case, I attribute it to all the beatings I've given him over the years, not to mention countless hours he spent duct-taped to the ceiling for timeouts.

You don't need a fancy butcher shop to buy brisket. This isn't prime beef. It is a tough, relatively cheap cut of meat that you just need to take your time preparing.

I agree - I'm just looking for advice - this is my first attempt at actually making brisket so i want to give myself the best chance!

A flat from a wholesale club is as good as anyone's. If you really want a treat, a whole packer from Walmart Super Center will have the point attached as well for making burnt ends.

you are correct, sir. braising, with onions, carrots etc.

I went with a first cut butcher order from Maple Kosher. We will be roasting it, covered - wanted the first cut so we can hopefully develop the flavor and also not dry it out too much.

If you are braising make sure you have a quality heavy cast iron dutch oven.

I do have such a thing, but I think it's too small for a 6-7 pound cut, plus the veggies.

We were going to go with a metal roasting pan, cover with tinfoil etc.

I'm new at this. (brisket in particular)

Since you said Kosher desired, I was going to suggest this place. I’ve never used them, so I can’t give an opinion either way. Since Green Village is close to you, that’s where I’d go. There is also a place on Morris Ave in Union, Union Pork Store, for non-Kosher may be an option. Steer clear of Barth’s in New Providence. The quality is fine, but you pay a premium.

With brisket, as long as you remember low and slow you'll be fine. Don't get ripped off buying any "high end" brisket. It's a cheap cut. Pay a cheap price.

Barth's Market, New Providence. Very close to southeast Morris County. They have expanded the store significantly over the past year and just opened the new space as of today. Amazing store

Roasting pans typically have handles which foul getting a good seal. I’d go glass bakeware.
Either way, cover the pans or dish tightly with plastic wrap to really lock in the moisture. And once again, braise in beer !

Midstate Meats in Monroe Twp. is also closed - sometime around the beginning of Covid.

I've long conceptualized something like a "meat emporium" - a small supermarket-sized space with a butcher counter, poultry counter, deli counter and a fish counter, along with coolers stocked with prepackaged product.
