Good Afternoon:

:: Had to throw down for the MIL's birthday on Sunday. She's a vegetarian, so I got to run through a good chunk of the CSA inventory. Hence, all the salads and fresh salsa I posted the other day.

:: I like what cooking a vegetarian menu does for my kitchen game. A different menu approach opens my mind up for new ideas. I also get in a lot of great knife work plowing through all the produce. Since I'm not in my corporate kitchen or restaurant kitchens as often it's nice having little projects that keep up my chops.

:: I put a bulgogi marinade on some pork tenderloins with the intent of grilling them. As I was getting the deck ready for the outdoor feast saw my smoker and got to thinking that pork tenderloins were pretty small and wouldn't take long to smoke. Since it was early, I had time to kill, and some extra wood chips lying around I fired it up.

:: WOOOOOWWW! What a phenomenal flavor. The pork tenderloins took on a gorgeous ham-like smoky color. Didn't use much in the way of resources either. Only about a two hour smoke to get those up to 140 and pull them.

:: Have dinner plans for the leftovers...

- Prosciutto
- Cornishons
- Gochujang Mayo
- Sriracha Mustard
- Tillamook White Cheddar
- Toasted Baguette

:: What I remember from the peak John Thompson Era Georgetown years. Aside from killer basketball, you were SOMEBODY if you were able to score any Hoya Starter gear. Those jackets were dope when Hoya Paranoia was in its prime.
Take the pork tenderloin, duxelle and prosciutto and make a Pork Wellington.

Rocky is the best from a quality movie stand point plus its ending subverts the expectation.

Rocky III and IV are insanely fun movies with some iconic moments plus Rocky defeats communism on his own.

Rocky II is good but it is really just Rocky I with the expected ending.

Rocky V is terrible. Having his kid age 5 years while Rocky is in Russia like it's some kind of black hole would have been an inspired metaphor if had been more than "I just want my dumb kid in the movie."

I'd consider cutting Adrian out of Rocky IV before the Robot.

The pup begins his "aqua therapy" this evening to combat is rapidly worsening arthritis. At this point I need to just switch my direct deposit right to various veterinary services. But i'll spend whatever if it makes his last little bit as comfortable as possible.

Alabama sports radio mentioning that UK could have an advantage this season bc they can run a number of offenses and have shown they can adjust on the fly. So if covid hits your QB room- a lot of schools are basically more f'ed than UK would be. Hadnt actually thought about that angle and i doubt any team will get wiped out of an entire position- but it does emphasize that our staff has done really well with personnel changes when they are forced to.

DJ and Rahm seem like two complete meatheads but they put on a good show to end that tournament. Dropping a double breaker or a 60 footer >>> hitting it 350 off the tee.

A guy I run with in the mornings misstepped a curb today and I could hear his ankle snap beside me. The sound just about made me sick to my stomach. I've broken a number of bones but that just looked awful/more painful than anything.

Getting calls today because there is an organized protest on campus, but the university has already forced a shut down of all student events and programs outside of the classroom. At this point I am able to accurately predict the calls/complaints we are going to get on a daily basis.

Keep my head down, go to work, pay my mortgage, repeat. Thats my strategy until I can retire in 2065.

Really sorry about your pup. Hang in there. I know it’s got to be really tough.

You can't take Adrienne out of a the first two. He doesn't go the distance without her beside him. The line toward the end of Rocky I where she gets into the ring at the end of the fight to see him and he has a broken nose, cut eye, and face that looks like ground beef and has just experienced the greatest event of his life and he asks her " What happened to your hat? " might be the most romantic line in a movie ever.

After the first two, Adrienne doesn't really add a lot.

Nice little COVID weekend.

*Saturday my wife and daughter went to the pool which gave me and hour and 15 minutes to drink as much beer at Gustavos as I possibly could. 3 tall boys was the count.

Saturday night was spent at 502 on the back deck, drinking cold domestic beer and listening to live music.

*Hungover Sunday, so the pool was a good way to sweat it out. Family wanted to go out to dinner so I forced myself to drink a few more. Kid drove the cart home.

*BMW finale was fantastic. Golf is still the only sport I've invested hours in watching. Not for political reasons, just not interested in NBA or short baseball season.

*Got an email today a kid at school has.... THE COVID!

*Tomato, mozzarella, basil, and balsamic vinegar panini. Awesome.

I mean, Tucker asking Brooks that question was just asking for Keion to be painted into a corner. In all honesty, he's a 19 year old kid. I don't doubt that he hasn't concerned himself with researching Adolph Rupp.

2020 ain’t so bad. We now live in a world where after landing a commitment from a national top 125 player the head UK football coach releases a video of himself dropping a mike followed by the recruiting coordinator going on the a local sports radio show the next morning basically proclaiming that Kentucky would beat many of the schools ranked in the preseason top 25. And, he said it with conviction.

Litigating complex issues via social media seems to really be helpful to our country. Glad that’s the new go to.

Seems like the woke virtue signaling and our President’s tweet tantrums have really brought people together as one, trying to find common ground and make our nation a better place.
