- 10 years of marital bliss for the lass and I today.

- I discovered this thread shortly before that, while I was still in law school. 80 actually figured out who I was back then (different screen name); he and the lass were working at the same company at the time and something I said about her tipped him off. Hard to believe it’s been that long even for me, not to mention you 20 year vets around here.

- Merrick patio bar tonight, Castle & Key day date tomorrow, and Ruby’s tomorrow night. We wanted to do something more extravagant for the 10 year (maybe even go back to our honeymoon spot?), but, you know...

- We just sat in the back yard together admiring the cotton candy skies and amazing breeze together last night. I got, in Brooks’ words, “sailor drunk.”

- Threw a little 90’s R&B Radio on the Pandora for good measure. We laughed about the fact that R&B literally isn’t even around as a genre anymore. That’s fine, though, I’m okay to just listen back and reminisce on what we had before. “R&B” today would probably be all auto-tuned garbage anyway.

- College football. 😎

- Paolo to Duke. K. (GET IT?! Lulz.)

Good Morning:

Friday Randoms...

:: Flat Iron steaks are a good alternative to your more expensive traditional cuts. They're really tender and take on any marinade or seasoning rub you throw at it well. The trick though is don't cook it past 140, over that you have shoe leather.

:: I have become a fan of the reverse sear...

1) Overnight dry brine with Kosher Salt (if I've got a big thick premium steak) on a drying rack over a sheet pan.

2) 225 degree oven until steaks get to 120. Pat steaks dry.

3) Screaming hot cast iron w/ a touch of canola oil for 30 seconds a side while adding butter. ( Be sure to turn on all the fans and open a couple of windows before you sear).

4) Profit

:: All purpose rub...

- Equal portions of Kosher Salt, Fresh Ground Black Pepper, Cumin, and Herbs de Provence. Works on veggies, potatoes, chicken, pork, beef, and fish.

:: My go to COVID comfort food...the classic french rolled omelette. When you get it just right with the slightly creamy center and zero browning on the outside it's just the best. Once you get it down it takes less than 10 minutes start to finish. It's the first thing I cooked when I was able to stand in my kitchen again. All is right in the world during the 15 or so minutes I'm eating one of those.

:: Fresh tarragon and a tablespoon of heavy cream when you scramble the eggs. Trust me.

:: The beauty of being away so long. I don't recognize a lousy update.

:: I got rid of all my charcoal stuff when we moved. I've never really bought into the "flavor" of charcoal grilling. Always tasted like soot to me. I think it's due to the fact that I loathe cleaning up ashes so much that the entire process isn't worth it to me. I've definitely become a path of least resistance guy when it comes to cooking outside.

:: I'm a big fan of the Smoke Vault gas powered wood chip smoker. Everything I've pulled off that thing has been dope. It's extremely efficient. Once it's dialed in the temp holds really well and doesn't use much in the way of resources. It's pretty portable as well. I brought it to the stadium and smoked ribs the last time UGA came to town.

:: Speaking of the stadium...I've decided to try and roll over my tickets to next year. All real or perceived risks aside, the game day experience doesn't look to be all that great with the parking lot opening three hours before kick off and little to no tailgating. Hell, if the capacity is going to be in the 20-25% zone I'm not sure I have the K-Fund stones to even be in the running for seats anyway.

:: If they do play this year the season will undoubtedly be a success. Best roster in fifty years and I'm giving up my chance to see it live. I'm doing what I can guys.

-Can I safely cancel Hulu yet? Reds are terrible.

-First day of school for the little man, crazy. Couldn't be happier that he made it in class. Not exactly the most ideal circumstances but better than a video screen. Surreal dropping him off, wish it could've been filled with fanfare, kids hanging on their parents legs, and crying Mom's but masks and temp scans will have to work for now.

-Declined Oaks/Derby tickets 😢Just not going to be the same, if we would've even ended up being allowed in. Protests, masks, restrictions, no pageantry, the whole deal. Guess I'm going to be sitting around the house texting with the syndicate.

-One plus from this whole thing, my sandwich game is on f*cking point. It's not Morris Deli, but it's no more than 1 level down.

-Coast would be an understatement for my mentality today. Had 3 guys lose their minds yesterday afternoon that basically kept me up all night. Off day from working out. Pick up little man from school, ice cream, t ball practice, few collides because summer is quickly ending, open the windows on the patio, cap off with a top shelf brown water.

-New workout shoes en route. Stuck with the metacons but went up to the free 3s.

-Cooking randoms are always a hit. Nice post. Big fan of the FI, cutting it properly is equally important to temp. Need to try one with the SV. Strongly disagree with your charcoal flavor take.

-Everyone still cooking bread, hanging stuff in windows, playing drinking games at 5? K.

Going to Ruby’s for the first time tonight and I almost always go with a ribeye when I eat steak. Any reason reason not to do the same there? Anything else we should get?

:: Sous vide flat irons are great. What's really awesome is if you have a bunch and you've had to vacuum seal & freeze them, no worries. Just throw them in the water bath and add an extra 30-40 minutes to the cook time. They come out perfect. Use that extra time to crank out dope sides and sauces.

:: Spot on about cutting flat irons. Against the grain. On a bias.

:: Nowadays shoes are about comfort for me. The ones that fit me the best? Old Man Nikes that are whiter than this background. FTL

Randoms in the new format:

-SGNI and I started posting on CatsPause probably in 98-99. Packed with plenty of crazy posters like Katman2000. I remember SGNI and I grabbing dinner in Indy with UKCincyCat and Larry Vaught thinking I was dinning with celebrities.

-So my kids have spent alot of time at our farm and have developed the love of catching crawfish. This lead to a week weeks ago bring the crawfish home and putting them in a kiddie pool in the back yard. Yesterday they convinced the wife that the crawfish should live inside, getting her to buy a new aquarium setup, then feeding them so much the clear water has turned brown. Guess who gets to clean up crawfish sh*t and change the water when he gets home. I'm not cleaning up after the dog, nor the cat. I'm cleaning up over some Crawfish. Mother f**king crawfish. Jesus

-Owning and running your own business would be so much easier if you didn't have to have employees..... or customers.... Many days I stare into the bathroom mirror and tell myself, only 40 more years. You can do it. I swear some of the stuff that gets brought to me sometimes questions what I did in a previous life to deserve my position on earth. Other than that, I love it though. 🤬

-The first day of school for the kids is a big one. In Woodford, I have no idea when the kids will actually go to school at this point. Maybe sometime in 2021 if we are lucky? "Here's your Chromebook. You must be logged on so many hours a day between 9AM and 2PM or you're considered absent. Good luck this school year."

-Is anything at Rubys not good?

-When do we get to find out if/who gets to attend the games or when we are getting our refund. Don't get me wrong, my main concern is us just playing football, but if we arent getting in, I wanna my cheddar back.

-I should have bought a Jeep years ago. Just a solid, fun to drive, cruise around to some do some errands & weekend vehicle.

- the more I look at our defense the more I think it is going to be really good.

What's the trick on strips? Always come out tougher than Ribeye which is what I stick with.

To me the strip (big fan) is kinda between the ribeye and filet. I really like the way Tony’s serves the Sir Barton, as a thick narrow cut. Works great with a reverse sear.

Will also have to disagree with Fylm on the charcoal flavor. I’m kinda twisted at the moment as I love the sear of ultra high heat that I can achieve on the egg with the charcoal flavor versus the magic of butter and cast iron...lately been doing mostly ribeyes on the blackstone swimming in butter.

Oh, I forgot, all of the trendy bourbon heads who didn’t appreciate brown water until mid 2010’s are lecturing me on how to properly consume good juice.

I’ve been around the damn block and have had access to good bourbon for quite some time before it became trendy while they rest of you dipshits were following some other trend along the lines of clubbing out to cheap vodka bottle service, vertical striped shirts and hair gel.

Friday Randoms:

- I've been a member of this site going on 20 years, yet only have 2k plus posts to show for it. First found GYERO around the time I was in Iraq when I was allowed on a computer and have followed since...maybe making 10-15 posts per year. My "Reaction Score" speaks for itself based on ratios.

- I've got some life decisions to make in regards to moving or staying put. On one hand I *love* where I live in Newport. But on the other, I would love to be closer to my oldest and possibly live in Savannah. I've also thrown Asheville into the mix since I recently applied to a Wilderness Therapy program - my dream job.

- If we have a season, Cats will go 6-4 or better. I see us taking down 2 of 4 out of Auburn, Tennessee, Florida, Georgia.

- If this needs to be said, the NCAA still sucks in granting waivers. Why is UK almost always the last to know? We need Sarr and Gatewood.

- Finally no weekend plans for the first time in forever. Which probably means I'm heading down to O'Bryans for a day to drink and watch sports on the patio. @wcc31 you in?
