I don't have the clip of it...but the beginning of the Godfather, and Marlon Brando is petting the cat....that was completely unrehearsed. The cat just showed up and made himself at home and Brando just rolled with it.
Indiana Jones, the original, when he reached for his gun and shot the guy...again, 100% improvised

Not that either are the best scene ever, but the way they improvised and just kept rolling, pretty great.
