OT - Weekend cooking. Anyone ever done corned beef?

So historically speaking, a deli corned beef sandwich has never been something that I’d seek out. However, I made a trip to the Oaklawn racetrack not too long ago, and a buddy said that I had to try the Reuben. I did, and I don’t know if it was the actual sandwich or the fact that I was 5-6 beers in already, but it was fantastic. Unlike any corned beef I’d ever had

Anyway, I’m basically just following the rec tec recipe on a 3 lb cut, and it seems pretty basic with a Greek rub, beef broth, carrots, onion, etc, but I was curious if any of y’all had ever done this before.

If not, what do y’all have planned? It’ll be this and Uncle Earnest for me tonight

Think I’m gonna do a pork belly and burnt ends this weekend. I wasn’t real happy with how the burnt ends turned out last time but I was quite inebriated and probably left them on too long. It’s gonna be a Sunday cook for me but I will update. I’m keeping the bottle on the shelf for the weekend so whatever the non alcoholic version of cheers is!

Can’t remember which episode it was but “Binging with Babish” in YouTube did one and it looked amazing

No. But I made Steak Umms last night. Toasted hoagie with melted swiss and some sauteed peppers and onions. Best quick freezer meal I have made in a while.

Hoping to have time to get wings on the grill today. Smoking a MS pot roast tomorrow.

Skin on or off? I did skin on for my first try and came away feeling the same way as you. They were good, but by the time I finally got the skin to where it was semi-crunchy rather than tough, I feel like I overlooked the actual meat

I've done pastrami in the instapot and it turned out really good. Problem is it takes 3 days.

Did one during the hurricane and had some kids of mine and my wifes teams without power come over to get a hot meal and shower. They loved it, so I'm making a few of them tomorrow morning for a bball tournament.
I did mine pretty much how Malcolm Reed did his, but I did mine two hours in the oven at the end in stead of the grill/smoker.
2 hours on smoker with cherry wood (hovered between 250-275), into dutch oven for 2hrs in oven, butter, ranch, au jus, 6-8 pepperoncini's with a splash of juice. Holy **** it's good.

I'm smoking a pork shoulder for the 1st time... I bought a brand new Weber kettle and thought I'd break it in with style.

Yep, corned beef is great! The wife taught me to make a Rueben and now I love a homemade one better than any restaurant. I am even considering making my on sauerkraut! Grilling the bread yourself is a game changer too and the proportions can be as thick or lean as you like. Man, I gotta do one soon.

Just smoking some wings for the afternoon game then grilling some filets for dinner

Two more saturdays of soccer and then ill be able to take on a cooking project again

I grilled one last St. Patrick's Day day. It's was very good. I would definitely recommend soaking it in luke warm water for a little while to draw out a lot of the salt.

Of course charcoal... What else is there?

I've had a Weber kettle for years, but only a 16" so I've never had the room to cook a big piece of meat like a shoulder. I stepped up to a 22" with all the bells and whistles.

I never would’ve thought about adding some pepperoncinis, but that’s a great idea. Like I said, I pretty much followed the RecTec recipe by smoking at 250 by itself until 165, and then wrapping it in a pan with beef broth, onion, garlic, etc until 195. But now I’ve got it sliced and in the crockpot with the au jus to have it ready for lunch, and I’m sure gonna throw some peppers in there.

Corned beef seems to get passed over a lot when talking about smoked meats, but if it turns out the way I’m hoping, man it’s good. Chopped up leftovers aren’t half bad on nachos too

Good to hear it...I need a new one also. Ain't a damn thing that can't be cooked on that baby. I've done it all on this old 20 year old one
