This might be a dumb question on a Wednesday but how many athletic departments would go belly up if there wasn't a football season? Sure Bama, Texas and a few other elites could withstand the loss of incoming revenue, but most live off that three month run in the fall. The loss of tickets and attendance is one thing but if you rip the TV revenue umbilical chord, even for a year, would have to think you'd see detrimental effects across the country.
I mean think about the sunk cost of the coaching staffs not only in football but every Olympic sport. Almost every scholarship athlete is riding the pigskin coattails. Ancillary gigs like marketing / PR / whatever cclark does. Can't see the swimming & diving or the tennis team traveling for a meet if Sugar Daddy Football doesn't get theirs first...
...then you've got the hotels, restaurants and every other local store in college town usa that makes a bulk of their yearly sales during those 8 home weekends.
All that said I think the Universities will realize this and try their damnedest to figure out a way to at least play out the season in some limited capacity; be it pushing the season back a few weeks (who cares if it goes up to the holidays, just cut a few menial bowls), limited to no fan attendance. Something. There's too much riding on the football gravy train just to shut that spigot off completely.

Given the impending financial collapse, I think it’s safe to say we won’t be seeing $20 million coaching buyouts, or $3500 Pappy Van Winkle again anytime soon. Wouldn’t want to take a long position on either of those, for damn sure.
