Well, 111 mph is actually the start point of Cat 3, but we get your point. It was a strong Cat 2 and Golden Meadow actually had the 105-110 sustained for several minutes.
As for the WC, they would be derelict if they ever down played any land-falling Hurricane. Let’s face it, the NHC underplayed this one saying it would max out at about 85 mph and probably deteriorate to a Trop Storm before landfall due to wind sheer and and cooler coastline water. But yesterday, on the vapor image, the WC showed the sheer moving quickly north as if the sheer was getting picked up by the incoming trough and retreating to the north opening up the warmer water.
