I agree,.. al dente normally applies to pasta or vegetables,... she ate raw or at best undercooked chicken, yuck.

She is reconstituting fully cooked and freeze-dried backpacking food. This would typically be done by pouring hot or boiling water into the pouch and putting it in a stocking cap or other such cozy. She's trying to eliminate the need for stove/fuel. The freeze dried food did not fully rehydrate and it was a bit crunchy or "al dente". She is a trooper and did not seem too bothered.

If I run into her on the trail in the James Peak Wilderness next week, she can borrow my stove, if you know what I mean.
