Alright fellas, we've somehow reached the halfway point and Bama's knocking on our door this weekend, so it's time to get serious. Congrats to JoeLee on a fine looking tri-tip in Week 5, and we're back to running things wide open this week. Steak, wings, fish... whatever

I was going to just smoke some armadillo eggs tomorrow and try my new creation of the chupacabra eggs (replace the jalapeno with habanero.) But ...

Albertsons had a sweet looking SRF wagyu bottom round roast on sale for $6.99 per pound so it looks like I am making some smoked roast beef sammies as well.

Doing my armadillo eggs and chupacabra eggs (patent pending) first. For those unfamiliar, armadillo eggs are stuffed jalapenos (I use seasoned cream cheese, pepper jack, and cheddar) wrapped in breakfast sausage, then wrapped in bacon, covered with rub, and glazed with BBQ sauce at the end. Smoking for 1.5-2 hours at 275 ish.

Armadillos are excellent, la chupacabras are un17ing believable. If you like heat, sausage, bacon, BBQ, and cheese... I cannot recommend them enough. Tons of recipes for armadillo eggs out there, swap it for the habanero for the real thing.

Not the tenderest cut of meat, but it is an easy bite when sliced thin. The flavor is wonderful. Extra helping beefy.

First cold night of the year- five-alarm Chili

Have an overabundance of jalopeno peppers in my garden, along with a lot of banana and bell peppers. Mix with some Onions and Garlic, then make two sets of chili- bean and ground beef chili.

Slow cook both for six hours

Going to grab some supper and then to Kroger for a couple Boston butts for an all night smoke for the tailgate tomorrow.

I got enough to make two kinds of chili- ground beef, and meatless (for my vegetarian kids). The veggies on the right are Jalopeno, bell, and banana peppers, along with a couple of onions and minced garlic.

Will get both sets of chili on the cooker about 4 AM tomorrow morning, then go back to sleep. Get up, make some jalopeno and cheese biscuits to go with one-egg omelettes for breakfast, then open up the windows for the first cool day of the year.

After 25 years in Mississippi humidity and Texas heat I have chronic swamp ***... The cold is good for me. But I do have to carry roach clips in case I need to piss outdoors at times. While I will admit we have 4 seasons, it's not what I thought... Winter, 2nd winter, spring, and fire season.*

Cons are a push... Jaws vs Bigfoot.

I will enter this week although I know I won't win because it's nothing fancy, but we're going with some White Chicken Chili cooked in the Instant Pot (first time trying this), Nettles smoked jalapeno cheddar sausage (first time) warmed in the oven to get a little char, Boars Head 3 pepper cheese and a Family Sized bag of Gardetto's.

Drinking Truly Hard Seltzer Citrus pack.

Should taste good, but nothing too fancy except for the Gardetto's. Cheers! Will update with pics as they come

Updates:
Instant Pot is pretty impressive. Cooks insanely fast and the chili is already Flavor Town USA. I will let it set and warm for a few hours to let those flavors really set though. Cooked the concoction for 20minutes, then let the Instant Pot depressurize on it's own for 10 minutes. Removed chicken breast, shredded in a mixing bowl and returned to Instant Pot to mix absorb the moisture and remain at low heat to let flavors set.

I whipped out some Ritz and jalapeno raspberry jelly I already had and made a nice stacker with the sausage and hot cheese. Wash it down with olives and Truly of course.

Not pictured: Me (you're welcome) in my lucky shirt. It helped us win the Natty in baseball then it disappeared until suddenly and magically reappearing on the eve of the A&M beatdown. Lucky shirt engaged baby! It's one the first MSU Adidas shirts we had with the "new and improved" M State banner. Circa 2010 probably. It is the right color Maroon shirt too. MSU Maroon no doubt.

Update #2: Forgot about the baked potaytas. Rubbed potaytas with oil and salt. Few fork pokes each and in the oven at 450 degrees for 45min to an hour. The sausage is a little meh. It was pre cooked, so all I did was warm it. The 3 pepper cheese with jalapeno raspberry jelly is the tits. Can't wait to eat the chili right before game time. Recent taste test confirms flavors setting in. Very surprised how good the chili is actually.

I got some lamb legs from costco a while back, planning on doing those. Will post pics if they look pretty.
I've been out the last few weeks so really happy to be grilling for a 6pm game.

The meat chili is awesome. Had some and mixed a biscuit in. Very spicy but not quite a sinus-cleaner, aka, superb.

The meatless one is a little soupy (forgot to drain the beans before putting in the slow-cooker. However, still tasted pretty good- a little less spicy.

I’m smoking chicken wings on the kettle and having fresh potato wedges with green beans. The wife is making pulled pork egg rolls.

Alright, question for the pellet smokers. I had to change the starter on my Weber gas grill today, and while I had it torn apart, I decided that it was as good a time as any to clean it out along with my Rec Tec.

Long story short… after I pulled the drip pan out to recover it in foil, holy smokes… I probably had a cubic foot of ash. Is that pretty much a sure fire sign of crap pellets or have y’all dealt with that before?

Some pellets do make more ash than others, but it’s normal and helps insulate.

MeridianDog... Do you need to adopt any adult children? I have a feeling Thanksgiving and Easter are very rewarding at your house. Quaker Oats instead of breadcrumbs in the meatloaf... Who could have known?
