If you're without kids, I recommend driving up to Gruene Hall in the evening as well. Cool place to listen to some live music.

I’d second this recommendation- you don’t even have to go in the evening. Weekend afternoons or just fine for day drinking.
On your way there you can go by Luckanbach and run into Willie and Waylon and the boys.
Last time I was there, we had a killer meal at Bliss.
Maverick is killer as well
Also Paramour rooftop bar was a great atmosphere for some drinks.
Esquire is the best place for quality cocktails though
plenty of great Mexican food everywhere so I wont fight those recommendations.
If you're bored, go to the old Pearl brewery that has been turned into tons of shops, bars and a cool hotel. I know a lot of things in there have closed though since COVID so i'm not sure what all is still there.
