OT: Best Summer Sausage

After reading the pot roast thread yesterday, my little fat *** got hungry. So I took my talents to the deep freezer...where I found some deer summer sausage. So I sat it out to defrost.... Some old feller makes it here round town.

I forget how much I love the stuff. Who makes the best summer sausage in MS or LA?It does not have to be deer specifically.

Vine Brothers in Centreville MS has amazing stuff but not a huge fan of the reg summer sausage.

Dwights on I55 near Raymond is known throughout the State for making the best deer sausage. People drive from Greenwood, Greenville and Grenada just to get their deer processed by him. Be warned, he's an ornery ole cuss and may tell you to 17 off though. He does so much business, it takes months to get your sausage back.

I really like Fork N Road just off Highway 45 near Caledonia, north of Columbus.

They offer a good selection of stuff. I really like their snack sticks, which are about the diameter of an index finger.

Their burritos are good too. A lot of my coworkers take deer there to get tamales.

I've not had anything from there I didn't like a lot. They're not cheap, but they're very clean and quick.

Ive had Dwight’s smoked sausage. I’m close by. It ain’t that good. Maybe his summer sausage is better.

I used Dwight's this year and it took about 6 weeks, not bad. I like his

sausage because it seems have the least fat of other's I've used. Great flavor.

Any sausage from Wilson's Meat House in South Crystal Springs is about as good as it gets.
