I’d say it’s a non-issue. Just write the 2nd year as an option year and agree to reexamine after year 1.
No they want it nailed down. He will most likely play his best the second year and nobody wants to deal with the transfer portal after all it would take to get him here period. Lock him down for two years that way the investment is more likely to pay off.

I was under the impression that 2 year deals weren't a thing under the current implementation of NIL regardless? It seems like if it was possible it would be more common. Sign him for one. If you can get another deal done next year, sign him for one more then. If not, let him go to the portal and replace him. Not really sure what the issue here is. You don't pass on a player of this caliber for a reason like this.
There have been many multi year deals and yes it’s possible. Why people say this I don’t know when there have been literal court cases trying to get out of deals and recoup money by schools even.
