How long will MSU Cheese keep?

Cheese will last until the mold consumes it. Hell even the mold is is eatable. If you don't want to eat mold scrap it off.

Vallagret and Edam. Constantly refrigerated (not frozen)

I worked at the MAFES dairy plant my first year at state. I made all the cheeses and everything else. The cheese is good for serveral months. Just be careful to put something over the bare cheese so it won't harden.

Jalapeno Cheddar

Big fan of the Jalapeno Cheddar.

It reminds me of the cheese in the conecssion nachos from mid 90s. I just had a slice of it with my lunch.

I miss those nachos.

When I lived in the deep north, I would carry it up to NYC with me. Would cut up into smaller hunks (maybe a 1/4 of the cannonball?) and vacuum seal in bags and keep in fridge. Would cut off what I wanted from a chunk, then reseal and re-vacuum. It was still good at the last pieces about 8 months later.

There's a handheld sealer and pre-made foodsaver bags that are pretty good for preserving cheeses if you're a cheese fan. I make pizza pretty often and this helps me keep cheese longer between cookings. Amazon link


Also, a quick aside... if you're ordering from Amazon, you can use Amazon "smile" and have a portion of your purchase sent to MSU. Just change the http://[B]www[/B].amazon.com/whatever-you're-buying to http://[B]smile[/B].amazon.com/whatever-you're-buying. I ended up getting $20-30 bucks sent to the Foundation the past few years. Not much but if we all did it, maybe we could get beer at DWS one day. Ha!

I've had Edam last for 9 months no problem. Vallagret will mold after 4-5 months, the vacuum sealing doesn't work as well as the wax coating to keep mold at bay.

I had an Edam in its original wrap in my fridge for about 3 years (just forgot about it). It was not edible, it had dried up completely.

Found this thread accidentally, but are you sure?? I am looking for a vacuum sealer with one purpose only - sealing up my cheese and at the work kitchen, too. What's about wax coating? I've never heard of it. Googled right now - looks like a soap brick
