Freshman year was pretty much spent bouncing between handles of KT and Natty Light. Legit had to take a couple years off the brown water after undergrad. (RIP old 6-pack)

I still can’t find this damn adjust width unicorn option.

Owning a small business with 21 female employees makes managing staff one of the absolute worst parts, of not thee worst part of the job. Especially with how incredibly flighty and undependable some can be. “The highs are never as high as they seem, and neither are the lows” is my “serenity now”.

First Friday off in about 3 years. Just finished up a trip to the outlet mall with 2 toddlers. Jesus, ready for a drink.

I started reading this message board (was it Cats Pause? Wildcat something?) when my best friend wanted me to see a video by this weirdo called Katman2000 when I was living in Royal Lex in 2000. Had a weird name called Fzbl or something that I don’t even remember. Time really does go by fast.

Steamed Crawfish:

2 qt water
24 or so Crawfish

- Bring water to a boil in a 3 gallon stock pot with a steamer basket

- Add crawfish and close lid

- Steam for 15 minutes

- Transfer to a flat sheet pan and chill uncovered until you can touch the outside.

- Separate and save the tail meat. Save the bodies for steeping in stock for gumbo or etouffee'.

Crawfish Etouffee':

2 Quarts of Stock
Crawfish Shells
24 Crawfish Tails
1lb Andouille Sausage, sliced 1/2" thick on a bias
1 Sweet Onion, Diced 1/2"
1 Green Pepper, Diced 1/2"
1 Cup 1/2" Diced Celery
3 Cloves of peeled fresh garlic
1 Bay Leaf
1/2 Tsp Worcestershire
1/4 Cup Cajun Seasoning
1 Cup Butter
1 Cup Flour

- Bring stock to a simmer over medium heat and steep the shells.

- Stir flour constantly with a wooden spoon and toast in a thick bottomed stock pot or dutch oven over medium-ish heat until flour turns a deep golden brown.

- Carefully add the butter and cook the roux until all flour is completely incorporated.

- Add celery, onions, peppers, garlic, Cajun Seasoning, Bay Leaf, and Worcestershire. Turn down the heat slightly. Saute' for 5-8 minutes or until veggies are soft.

- Ladle in about a quart of the stock to the roux mixture. Take care to keep the shells out. Carefully stir and bring to a simmer.

- Cook for 25-30 minutes then add another ladle or two of stock. Simmer for another 10-15 minutes or until desired thickness is reached.

- Strain any remaining Crawfish Broth and save for future use.

- Slowly stir in crawfish and andouille. Cook for five minutes. Check seasoning and serve.

Friday Randoms:

- I've been a member of this site going on 20 years, yet only have 2k plus posts to show for it. First found GYERO around the time I was in Iraq when I was allowed on a computer and have followed since...maybe making 10-15 posts per year. My "Reaction Score" speaks for itself based on ratios.

- I've got some life decisions to make in regards to moving or staying put. On one hand I *love* where I live in Newport. But on the other, I would love to be closer to my oldest and possibly live in Savannah. I've also thrown Asheville into the mix since I recently applied to a Wilderness Therapy program - my dream job.

- If we have a season, Cats will go 6-4 or better. I see us taking down 2 of 4 out of Auburn, Tennessee, Florida, Georgia.

- If this needs to be said, the NCAA still sucks in granting waivers. Why is UK almost always the last to know? We need Sarr and Gatewood.

- Finally no weekend plans for the first time in forever. Which probably means I'm heading down to O'Bryans for a day to drink and watch sports on the patio. @wcc31 you in?

Yup. Between unrealistic goalposts for covid, and the ******** Louisville is right now, it only makes sense. Sucks, but not surprising for this dumb year. Mass gatherings are just going to be really tough until...

Edit: Not that it’s an original or novel thought from me, by any means. Just thought it was funny how similar our comments were.

They were pretty damn stellar last year with a key piece out for the year and almost no experience, so yeah, I think they will be that good. It’ll be a big disappointment if they aren’t.
