I believe it was Mack”s All Night Western Supper Club. I did stay all night a time or two, but I never saw anyone eating supper.
I think there were some bags of chips for sale at the bar but even that memory is fuzzy.

Easy to miss Crawford now that the 4 lane bypasses the town. Although the old two lane 45A skirted the town. Anyways, Mack's was on the old two lane. The curve into the 4 lane, took out the building.
I was too young to experience the hey day of Mack's. But my dad knew him and we visited the bar a few times in daylight just to visit with Mack. I recall the chicken wire and huge panties.

A cool boutique hotel 23 minutes from campus may not be a terrible idea but your window of profits is very limited to about a 12-15 weekends a year I would think.
