Big Game Cooking and Drinking thread...

I know the game tomorrow doesn’t have all of the pomp and circumstance of the Magnolia Bowl, but I was wondering if anyone is cooking or drinking for it.

I’m going lazy with a pork shoulder on the Rec Tec. Mustard bind with KH AP and Hot BBQ rub. I got a late start because I was getting fitted for irons in Destin (thread to come), so I’m going for 235 raw dog the whole way to hopefully get it to 195 by 9AM tomorrow. Gonna wrap in peach paper for 3 hours in the cooler with towels and pull at 12. Hopefully.

I did a dry January so I’m drinking for the first time since Dec 31st. I had a bottle of Michter’s gifted to me so I’m sipping tonight, may play a little PS4, and wake up tomorrow ready to pull, rest, and eat. Doing the lazy rotel in the crockpot so if you want BBQ nachos that’s there, but I’ll be eating pulled pork sandwiches on Kings Hawaiian, probably 3 plain, 3 with hot vinegar sauce and 3 with Queso. I’ve lost 18 pounds in January so I can indulge a little.

Not to make this two political but we need bipartisan agreement on moving Super Bowl Sunday to the day before President’s Day for those that do get it off.

Some homemade smoked tuna dip, smoked wings on the grill, (meat church voodoo rub) with some Arthur Bryant’s BBQ sauce, Conecuh sausage, mac and cheese, and a couple Fairhope 51 Pale Ales.
Probably top it off with a couple jalapeño margaritas in 2nd half.

Homemade pizza with homemade hard lemonade and Elijah Craig over a couple of small cubes of square ice.

Early snacks are jalapeño queso to dip fresh tortilla chips and sausage balls in with mini margaritas.

I'm not cooking a bunch with there being only four of us.

The porterhouses go on tomorrow of course... Great cut for me. My wife's favorite cut is a Filet and mine is a NY Strip. The porterhouse has both. Making a blue cheese compound butter to top the steaks.

Pairing with some roasted baby potatoes and sauteed buttered leeks. Mrs Socks is making a cheesy bacon jalapeno corn dip for the game.

Tonight I just made a fresh batch of clear ice blocks for my bourbon. Buffalo Trace in the glass tonight, Col. Taylor will probably be here tomorrow night, but I have an 18 year old Dalmore that has been looking for an excuse.

Today 11 lb pork but with homemade mac and cheese that the wife does. Tomorrow chicken thighs and sausage off the old trusty Yoder. Also a charcuterie board for the game. All done with Jonesy-Q rubs, XTC might be the best rub ever created, imo.

Did a rack of ribs on the BGE today.
going with wings and pork belly burnt ends tomorrow.
will sip my usual Dripping Springs and cranberry.
I just can’t seem to develop a fast for bourbon or scotch.

Smoked Queso Dip for sure. Did a Tri Tip last night so I could use the leftovers for tacos. Have wings to smoke but considering it's just going to two of us they may wait til Monday to go on the grill. Dos Equis will probably be the beverage of choice.

You can keep the pinkie. Get mine at HEB (bad *** grocery chain in Texas). Zummos brand. It’s really solid.

Double Points for H‑E‑B.

We just moved to a new part of north Austin with a HUGE H‑E‑B just about ten minutes away. I am hoping to make friends with the new neighbors by next year's Super Bowl and get back in the football party mode again. I can come up with a great menu, plan, and cook it up but I need the small crowd again.

There's a Spec’s not too far away from me as well. Beats the rest of the the liquor stores easily for price and selection of all alcoholic beverages.

ETA: Don't you love Green Chili season at H‑E‑B?

Found some burgers, rotel dip and pork belly burnt ends. Gonna do a 50-50 mix of ground sirloin and ground chuck on pretzel rolls with the rotel dip for the cheese. With bacon, of course.

My wife was proud of herself for getting back below her target weight after all the Chex mix she ate over the holidays and wanted a major cheat day today so we’re going all fried.

Fried mozzarella and pepper jack cheese bombs
Fried wontons
Fried mushrooms
Fried ice cream

I also have some sausage to throw on the grill and a king cake to munch on. I’ll probably soak the leftover water chestnuts (after making wonton filling) in some teriyaki, wrap in bacon, and broil.

HEB is the best run grocery chain in America. They do a wonderful job with produce and meat. And there seasonal stuff is also always excellent.

Congrats on the dry January and weight lost! That’s awesome. I need to do a dry month, but the thought of it scares me, which is probably a sign that I truly need it...

I’m cooking some wings and ribs today. Having a few people over to watch the game tonight, but only people we’ve already been around. It’s going to be tough watching Mahomes and Brady playing knowing how both of them have always had Ole Miss in their hearts**

Zummo's is better than nothing. But if you live in Houston, way better options. Best boudin in I have ever dreamed of comes from Houston. Hebert's Meat Market off 610 and Westheimer I believe. When I lived in Dallas and drove to Houston a lot for work, I would grab a couple lbs of sausage and some boudin balls from Hebert's.

Also. You and Ibleed are right. H-E-B by a country mile over any other grocery store I have ever been to.


ETA. Woohoo. Just looked them up and they ship anywhere in the US!!! I will wait till spring, but this is big.

1 stick of Tillamook or Land o Lakes unsalted butter (plenty of salt in the blue cheese)

About 2-3 ounces of crumbled blue cheese (I like stilton.. which is pretty strong, but Maytag and Roquefort are stronger)

1/2 teaspoon of garlic powder.


Leave the cheese and butter out for an hour to soften to room temp. Fold everything together in a bowl. Plop it out on plastic wrap. And roll it into a log like Cheech and Chong would. Back in the fridge for 45 minutes and it's ready to slice like butter.

I heat my butter in a pan on the grill (sort of, I use an overfired broiler, but s grill would be fine.) And drizzle on the steak after.

I used to work for a company that supplied private label food products for HEB. There quality requirements were pretty hard core for some of there products. I both disliked and respected their commitment to quality.

Need to know about that smoked queso?

It's just regular recipe but heated on the egg. Add all the ingredients to a pan and cook it indirect over charcoal. It picks up the smoke and gives it a unique flavor. If you want to take the next step, grill your tomatoes, onion, and peppers and then purée rather than using Rotel.

I’m keeping it easy today also. All stuff that can either be fried or heated up in the oven.

Chicken taquitos, fried mozzarella, wings, chips/dip. I’m gonna give the air frier a try with the wings, but I’ve got oil ready if my trial run doesn’t work out.
