I bought half a cow earlier this year, so I have more than I know what to do with.

we have a similar problem. Still have most of a half beef in our freezer. Trying to make as much meatloaf, sloppy joes, chili, and nachos/tacos.

One great recipe I made was for a lasagna that uses 1lb sweet Italian sausage and 3/4lb ground beef. The depth of flavor from adding both beef and sausage was great and I found the fennel seed is what really put it over the top. It takes some work, but was so worth it in the end. Be aware this makes a pretty big lasagna, so you'll have leftovers for days.

That is a great start bean-o. What I have done in the past is pick a day and make a couple of bulk items such as chili, spaghetti sauce, taco meat etc and then freeze it or can it in smaller portions. If you do that and portion out your grind for burgers, meatloaf etc. you should be good for 6 months..
