I guess because they are professionals but I don't know how they could do that and not mess up at all.
It's not unusual for cast members to be really, really good live, but the guests almost always have to refer to cue cards. Matt Damon knew the assignment and did his homework. Solid episode overall. He was also very good in the sketch below (which he could ad lib a bit more but still...) - it's live.
Nothing even comes close to DeNiro and that SNL crew that posed as zany terrorists with those hilarious names!
I think this was a last skit of the night a few years ago.
