Jeff Varasano knows a thing or two about it, good enough to make highly rated Neopolitan pizza. I've spoken to him about it personally, and he says its complete hogwash.
Having been making artisan bread and pizza myself for many years i can tell you...it ain't the water. Believe what you want.

Yes it is. Ph levels and mineral water help make dough more elastic that is why there are companies now that can replicate the water in other places.
Best Pizza in Ohio - Brier Hill pizza from the Youngstown area. Nothing like the so-called Midwestern pizza.
Worst pizza in Ohio - Columbus area pizza (e.g. Donatos) which sucks a$$. Who cuts a round pie into squares? We used to request it to be cut into pie cut. If they refused or did it the wrong way, they were keeping the pizza and we were keeping our money.
I should know. I grew up in the Youngstown-Warren area (close to the PA border) and had the displeasure of living in the Columbus area for over 20 years.

Interesting. Had to look that up, the back story is classic. Rather certain I have had versions of this chunky sauce with peppers style. Sizzle Pie in Kingston Pa. Cooks down their sauce for hours with onions to sweeten it and make it thick.
I used to walk two miles in the freezing snow, uphill both ways to get a couple cuts of Buzzi’s Pizza.My brother used to live in Weirton, WV and when he flew in for my mom's funeral he stopped off there to pick up DiCarlo's, which is his favorite. We had some and while I like it, it's not my favorite Ohio Valley Pizza - I preferred Buzzi's in Rochester, PA. That was my mom's favorite too; she liked to pick it up uncooked and take it home to cook (only cooking the slices she was going to eat keeping the rest refrigerated). Thankfully, there is a really, really good OV pizza place in NoVa - Quattro Goomba's Winery in Aldie. Owners are from Beaver County.
Fond childhood memory for me; I heard it was sold but is still in business. Don’t get home as much as I like and my dad doesn’t love the pizza, but gonna check it out when I can. Used to be a block up from my local comic shop, Mr. Jake’s Funnybooks. What I wouldn’t give for an afternoon with pizza, my mom, and some comics….
Even to watch PSU play there? Thought you PSU guys would like to mob Columbus and have a PSU whiteout in Buckeye stadium.
We got pizza somewhere a few years ago. I can’t remember if it was in St. Louis or Chicago. But it was a this pizza (definitely not my favorite) but I can deal with that. But it had sauce on top of the pizza. I took a couple of bites and was done. I was pouting like a 3-year old and stopped into a fast food joint afterwards. I just kept repeating the phrases “This ain’t even pizza” and “who the hell puts sauce on top of the pizza?) over and over.
The best test of pizza is to eat it with no toppings- great pizza doesn't need toppings
I rarely have toppings. More so now because of my wife (she likes ground beef on pizza) but probably never has a pizza with a topping until I was well into my 20s.
It did reopen under new ownership. I happened to home and grabbed a couple of sheets. It was very close to what I remembered. That was about 2 years ago….
Midwest thinks Lasagna is pizza somehow. I used to be a NY/NJ guy #1, but the Connecticut/New Haven area bar pies are now up there.
