I’m going with steak pinwheels, which I’m making tonight celebrating the first full day of empty nesting while both kids are in college:

- butterfly flank steak and pound thin
- Season one side with garlic powder, salt, and pepper
- Lay on top of that layers of baby spinach, roasted red pepper, and pieces of goat cheese
- Start at one end and roll it so that it becomes like a tube with layers of each filling and steak
- Season the outside with with salt and pepper
- Either tie it closed with butcher’s twice or pin it tight with toothpicks
- Can cook it several different ways. I am doing sous vide at 132 for several hours, and then will finish with a sear to get a crust.
- Then cut into slices that look like pinwheels.
