The most high end bar in Chicago is probably the Aviary. They featured a drink some years back based on Mellow Corn. I always saw it as a bottom shelf type product, but had never had it so I was surprised to see it prominently featured in an Aviary cocktail.

No idea what it tastes like standalone, but it was a fantastic cocktail.
It's surprisingly decent. I always thought it'd be like a Hawkeye Whiskey or something like that because it's so damn cheap. But it's very decent, even on it's own.

A buddy of mine comes to visit once every year or so. I always let him try some of my nicer whiskeys, but I also know that he usually gets to a point in the night where he's pretty damn drunk, and a nice bourbon would basically just be a waste to give him. So I serve him up some Mellow Corn/csb

So this got me thinking about that cocktail so I asked Gemini to find the recipe. Yeah, not making this one at home:

Gemini’s response:

That specific drink is simply called Popcorn. It is a brilliant, hyper-savory celebration of corn that layers multiple textures and elements together.

True to The Aviary's signature culinary style, the drink relies on building several component parts—including a toasted corn husk tea and multiple distinct tinctures—before assembling the final cocktail.

Component Recipes

1. The Popcorn Tincture

This provides the heavy, aromatic movie-theater popcorn note right at the front of the sip.

  • Ingredients: 1 bag plain microwave popcorn (popped), 750ml high-proof neutral grain spirit or vodka.
  • Process: Combine the popped popcorn and the spirit in a large, airtight container. Let it steep at room temperature for 4 to 5 days, shaking daily. Strain the liquid through a fine-mesh chinois, then pass it through a coffee filter or a super bag to remove all fine solids and oils.

2. Charred Corn Husk Tincture

  • Ingredients: Fresh corn husks (dried or fresh), 150ml high-proof neutral spirit.
  • Process: Take your corn husks and char them directly over an open flame or with a kitchen blowtorch until they are blackened and smoking (do not use oil). Place the charred husks into a small jar and submerge them in the high-proof spirit. Let it steep for 1 to 2 weeks until deep, smoky, and intensely aromatic. Strain and bottle.

3. Corn Husk Tea

  • Ingredients: 4-5 clean corn husks, 500g water, 50g sugar.
  • Process: Simmer the corn husks in the water for about 20 to 30 minutes to extract an earthy, sweet corn flavor. Strain out the husks, stir in the sugar while the liquid is warm to dissolve, and let it cool completely.

The Master Build

Once your custom tinctures and tea are prepped, the actual assembly is spirit-forward and incredibly rich.

IngredientMeasurement
Mellow Corn Bottled-in-Bond Whiskey1.5 oz
Popcorn Tincture0.75 oz
Corn Husk Tea0.75 oz
Charred Corn Husk Tincture2 dashes

Instructions

  1. Chill the Glassware: Place a small, elegant rocks glass or small coupe in the freezer.
  2. Mix: Combine the Mellow Corn whiskey, popcorn tincture, corn husk tea, and charred corn husk tincture in a mixing glass filled with clean, solid ice.
  3. Stir: Stir smoothly for about 20 to 25 seconds until perfectly chilled and properly diluted.
  4. Strain & Serve: Strain the cocktail cleanly into your chilled glass. At the bar, this is often served over a single crystal-clear ice sphere or presented alongside a small visual accent of fresh corn elements to play up the aromatics.

We finally got that around here at a few stores a few months ago. The state bought so much A125 they couldn't get rid of it all. Most stores around here still have it. We never got B525 or any of the '26 releases. Pizzez me off because it's typically some of my favorite releases.
I ordered a store pick ECBP from an online store today. 137 proof.
