Salted Caramel Pretzel sounds delicious but they missed when they didn't pick teaberry ice cream. Palisade Peach is a good choice for Colorado. Glad they didn't do Rocky Mountain Oyster. Old Bay ice cream for Maryland. That's a no.
Man I wish it was easy to find legit Teaberry ice cream (not just spearmint with food coloring)

No one does pretzels like PA. It was the birthplace of America’s pretzel industry, and it’s why we have the Philly pretzel and the modern chocolate-dipped pretzel. The Salted Caramel Pretzel flavor at Bassetts Ice Cream in Philadelphia’s Reading Terminal Market puts crunchy chocolate-covered Pennsylvania pretzels right into the mix, with ribbons of salted caramel.
Death by Chocolate at Penn State. For f*ck’s sake.
Some of those multi-colored ice creams looked gross. You can delete Michigan and Illinois from your bike trip.

You know, Teaberry and Blackjack gum is still available in old country stores.
I've seen it at a few older type stores and of course Amazon.
Also Clove gum.
Bechtel's Restaurant along Route 15 in Lewisburg had some righteous Ice Cream back in the day! Worked there as a kid
Stopped there many times in the late 60's w/classmates from State College via Route 45 to Lewisburg, then on the way to Wyoming Valley.
There is a Mexican Ice Cream shop in Kennett Square called La Michoacana. Some of their flavors include corn, avocado, jalapeno, guava as well as the "normal" flavors. Great place!
That's what Italian guys use to get girls pregnant.
A friend of mine from high school opened up what is probably the best ice cream parlor in Berks. She has had real Teaberry on the menu in the past although I don't see it on the menu now.
