The Catholic Church wants the biggest TV/streaming audience it can get. It made sense that white smoke would appear either at the 5 P.M. or the 7 P.M (Rome time) voting session so North and South American viewers would be viewing it in during the day and Europe in early evening hours.

Surprised it took them so long.

Benedict was pulled out for the Jesuit, and the Jesuit hijacker picked 4 of 5 voting cardinals (CCP gets to $elect Chinese cardinals).

I'm sure the next pope was fixed before Francis expired

If they did plan it this way and with the decision being so fast, it seems that there was a clear-cut favorite going in.

I think you could bet it from the reports I heard, but not in Italy or Vatican City. I guess a better choice of words would've been "consensus" instead of "favorite."

He spent 20+ years in Peru, so maybe it'll be ceviche and Pisco sours, both of which are fantastic, as I've had authentic versions of each from a very good Peruvian friend (also, in case you didn't know, Rahway has become a destination for folks seeking top notch Peruvian food).

My uncle was a priest back in the day working in Peru for many years until he met a Peruvian gal, left the priesthood for her and they moved to Cali. She always cooked for us when she came back east, good stuff. Did not know that about RY.
