OT: Gree Egg temp

The obvious answer is that you need a third opinion. Most likely to be the gauge that's off though.

I’m guessing you’re talking about the egg thermometer on the dome of the egg. That one is most likely incorrect. Those thermometers don’t last long. Mine will say 500 while I’m just getting the fire going

The dome reading is pretty unreliable. If you have your deflector plate in, which i'm guessing you do at that temp, i'd trust the probe. That's closest to where the meat is cooking.

I have noticed that the longer the cook goes, my dome temp and probe temp tend to get closer. That's a function of the plate and cold meat heating up.

It’s also Normal for top of dome to be hotter than grill level. It could be 50 degrees diff if you’re still getting up to temp and have vents open. Normally in mine, at stable temperature, there’s 20-25 difference

I always go by a grate temp probe rather than dome temp. You can calibrate most of those kamado thermometers and I do it as needed with my Kamado Joe. On mine there is a screw on the back to adjust the reading. I take a pot of slow boiling water, put a set of tongs over the pot and set the thermometer in between the tongs. Make adjustments till it reads between 210 and 215 deg f. I confirm the reading with my iGrill system at the same time.

As other have said, calibrate your dome thermometer in boiling water. It’s normal for dome temp to be higher when smoking at low temp, especially indirect. It’s not as pronounced at high temps where the flames are licking the grate.

My egg thermometer says 275. My pit probe says 225. Which is one is right? Frustrating.
Almost certainly the pit probe. My green egg thermometer is prone to get "stuck". As it's heating up, my green egg thermometer will stick around 190-200, while my digital thermometer steadily rises. Then the green egg thermometer will eventually unstick and shoot up quickly.

The other possibility is that your green egg thermometer just isn't calibrated. Have you tried sticking it in boiling water and seeing what temperature it gives you? IF it's 40-50 degrees to high, then you'll know.

Get you a thermometer with multiple probes and use one of the grate for a true reading. I have an inkbird with 4 probes and it makes a 100% difference

This is the correct answer. If you put a probe at the grill level there will be a 25-50 degree difference front the dome. But if you leave the lid closed for several hours, the the dome temp and grill will slowly become closer together, even identical. That's why when people make pizza on the BGE they put it up high in the dome bc it's hotter there.
