Couldn’t find wildcat meat, I guess I could have just killed my mother in laws cat.

11 pound Boston Butt on the smoker at 1030, going to smoke it low for a while and finish it at around 300. Also put together roadkill, what me and the Mrs call sliced chicken breasts wrapped in bacon. Add in some fresh homemade Bama white sauce and ketchup base sauce.

Yeah sorry. I was worried about Delta was gonna make today a wash so I went the pizza route. Gonna get the rum started in a couple of hours.

Completely understandable brother, my mother in law is in Greenville. We have been up since 5am checking in on her. I hope all is good with your loved ones, along with anybody and everybody on the board that has been impacted by Delta.

With all the rain I didn’t plan anything for the grill. Cooked a big breakfast and likely will go eat Mexican early and be home in time for our kickoff.

Got some wings breaded and sitting in refrigerator, will re-bread about 5:00 and drop in the fryer. Also going to do some Buffalo strips, and I guess just appetizers for the rest of the meal.

Yeah, he needs to put it in a foil pan, add apple juice and cover unless he wants a 15 hour smoke. Going to need to up the heat to 275-300 as well.

Chicken wings, pepper jack and green onion sausage on the grill. I’ll go pick out a bourbon later but most likely be Early Times BiB. Best value out there.

Gotta learn how to make your grill work for you bro, as Myron Mixon would say. Prolly will crank it up to 350 and pan it. It will be ready by 8pm which was the plan.
Guy I know went to Mixons BBQ school. He gave me all his notes/recipe’s. Little too complicated for me. He loved it though.

I didn’t mean to be a dick, I knew I was going to have to finish it hot and fast. I kind of like to combine low and slow with the hot and fast, and it has always worked for me.

I like to use Apple juice with honey, butter, and brown sugar. You are very right I like to let it get three or so hours of smoke at a low temp and then go to 300 to 350 and let it finish. I know some folks like to glaze it, I usually don’t and will let it rest in the old yeti for about an hour before serving it.

The last couple of times I’ve cooked butts I’ve used the Turbo Method. 350 until 203 internal temp. I always was skeptical but I cooked two ten pounders a couple of weeks ago in 5 1/2 hours, no wrap, no pan, and I honestly couldn’t tell the difference from my usual 225 for 10-12 hours. And no stall, I’ve become a believer. I’m trying ribs that way next.

It turned out really good, I'd cut the chocolate in half, about 4 ounces, and the key is a high quality pure chili powder - not the chili powder mix with cumin etc. I used Santa Cruz chili powder from New Mexico, worked perfect.

We just finished cooking up some apple butter. Takes about 12ish hours and ended up with almost 200 jars.

Rained all day, so made a chicken stock and a roux. Will use them tomorrow for gumbo and chicken soup.

Have steaks to cook if the rain ever stops.

Racks on 250. Pineapple deer sausage. Fancied up Bush beans. The wife is on vegetable duty, to keep me honest.
