And since I don’t feel like spending the entire the afternoon in the kitchen, the wings, fries, and hush puppies will be coming out of pre-made freezer bags. That said, the catfish will be fresh and hand battered.

Most of it seems simple enough, but any particular tips aside from marinating in Dales?

If you don't have a preference for your hush puppies and if you're gonna use frozen....the last couple of times I bought some at Kroger they had some from a company called "Country Select" in Isola. They were Jalapeno flavored and as good as any frozen I've ever had.

Pre-made wings? I am good with frozen french fries and hush puppies. Fries get really close to as good and hush puppies don't get as close, but they're still solid. But I'm not aware of any pre-made wings. What kind do you get?

Also, if you're battering the fish, making up your own hush puppies is relatively simple. Takes a little bit of time to individually spoon out hush puppies but not a significant investment in time.

This is probably something most people do, but I like to coat the filets with a thin film of yellow mustard and bread them in a mixture of 2/3 Louisiana Fish Fry and 1/3 self-rising white cornmeal with some Adobo seasoning (yellow lid).

The thinner the better and keep the oil hot so they don’t get nasty. I like the Louisiana crispy fish batter.

There’s a small chain called chicken city in Arkansas, and they have bags of chicken that mimics pretty much any popular chicken you can think of throughout the fast food and restaurant world. Nuggets, tenders, battered breasts, everything...

Anyway, I’ve yet to try the wings, but they allegedly have at least a few varieties, and I’m gonna check them out this weekend. I’ll let you know once I see for myself

I buy yellow cornmeal and season myself with Tony’s. Throw filets right in the cornmeal and straight in to hot grease. That’s it. K.I.S.S. If you want to get really wild, thinly slice onions and spread across the cooked fish after you dump the filets on a tray/table. Then throw a loaf of white bread next to that.

This is right. Add: Don't overcook. Probably 5 minutes at most.

I approach the frying process with a little different approach. My goal when frying is to keep my oil clean. I don't marinate my meat, season my flour or my dredge. IMO, it all burns up in the pan and ruins your oil. If you are doing large patches of fried food, you will get inconsistent flavors. The last patches will have a bitter flavor because of all the burnt up ******** in the oil.

I heavily season my stuff as soon as it gets out of the fryer. The heat and little bit of grease will melt the seasoning into the crust if you hit it while it's hot.

A couple of years ago the tailgate next to us were frying fish. He dumped a whole bottle of Lemon and Pepper seasoning in with a 5lb bag of corn meal and breaded his fish. I normally do not like Lemon and Pepper seasoning but I tried it and it was good. The lemon flavor just fit with the catfish and the pepper gave it a perfect bite. That being said, premade hush puppies are a sacrilege!
