It’s been many years since I’ve cooked anything other than baby back ribs with the 2-2-1 method, but spare ribs was all that I was able to get at the store today. Any tricks to these things other than a slightly longer cook?

I do mine 275 for ~5 hours. You can either trim them back or leave it all on there. I prefer trimming the ends off to the bone tips and smoking that meat I trim as well.

i like spare ribs over baby backs.

We just had Malcom Reed from HowToBBQRight.com on, and he gave us his technique. Check the STM Podcast for it, or go to YouTube and search for it.

I use a 3-2-1 method at 220 - 230F with a little apple and hickory wood on my Weber Smokey Mountain:

1.) Hit them with rub right before going on the smoker then cook for 3 hours
2.) pull and wrap with foil (adding apple juice, brown sugar, and bacon grease in the wrap), put back in the smoker and cook for 2 hours
3.) remove them from the foil, lightly coat with a good BBQ sauce (I make a homemade one), and put back in the smoker for 45 minutes to an hour.

Oh, and make sure you peel off the membranes on them before you put them in.

Don’t cook them any different, just longer. Cut the ends off and make rib tips. It’ll be a bigger hit than the ribs.

I want to do a slight highjack. Peanut butter and jelly ribs. Who has done them and how do you do them?

I do pretty much the same method. Works great and gives a great cook and texture.

3-2-1 was a little too tender. It made the texture more like pulled pork, which is not really what I like.

You'll love Costco's pre-rubbed St. Louis style ribs...take home and cook. Not the cheapest per pound ($2.99) but great when you're busy but want great, meaty ribs.

Buy a case of colt 45 and a six pack of dale’s. Cut the plastic off the ol’ hog and soak in a bath of dale’s all night. Next morning start slammin those colts. This is key!! Give her a good run down with some season salt.

Microwave that piggie for a few hours while slammin that sweet 45 juice. Cut into portions with a hacksaw and plate with heinz 57.

Here's one that combines sous vide with a smoker. If you don't want to watch the whole thing, at least go to the 6:36 mark to see end results, then decide if you want to watch more.
