Best to let your black eyed peas soak overnight. Dont start with the canned stuff. Start with dry and pour in enough Dale's so they float easily.

My aunt ate mayonnaise on her black eyed peas before she passed 10–12 years ago. The thought still makes me queazy, salt is all I can handle on my peas.

If you don't have time to soak your dry blackeyed peas, you can slow boil them for an hour in some water.

Dump the water, don't rinse, add some stock, a chopped onion, garlic, pepper, two or three jalapeños, and a ham hock. No salt till you taste later due to the stock and ham hock.Bring to a boil then turn down and simmer as long as you can stand it. Salt to taste,

Plate with hot sauce, cornbread and the meat of your choice. I like cube steak that has been floured, brown and slow cooked with onion gravy with mashed taters and greens on the side.

There's a reason I fat as hell.

You could do that as well. As a matter of fact halve the water and use Guinness instead just pour it al in there

Put them in a pot and cover with at least 3 inches of water. Bring to a boil , cover and remove from heat and let set 1 hour. Drain and cover back up with about an inch of fresh water and commence cooking.

For lunch I had hog jowls, mustard greens, peas, and Mexican cornbread. Yum, yum! The jowl was sliced about 3/8 inch thick, never seen it sliced that thick before but it was excellent. I’ll request it cut that way from now on. The peas were half blackeyed peas and half Hoppin John. I can’t wait for leftovers.
