what all these different practice jersey colors mean. I'm used to green and of course blackshirts from the past but now there's also yellow/gold and gray as well.

There's always been yellow jerseys. The second string defense wore those forever. It looked like Casey Thompson had one on so I assumed in that case it was for guys not able to fully participate, but I could be way off. But yellow is not new.

So is this the case for this staff?

green = equals healthy but DO NOT TACKLE
yellow = not healthy but can practice on a LIMITED basis
gray = goes both ways
black = blackshirt defenders (someday but nobody qualifies this spring)
single digits = rewarded through votes by team mates
red/white = ordinary player

pink = future transfers to IOWA :)

We’ll now you know!
I thought over Winter Conditioning they were wearing different colors because they had different groups of teams for competition.

What I have read -
White - offense
Red - defense
Gray - playing offense and defense
Green - full participant - no contact
Yellow - limited participant - no contact
