Do a reverse sear from your pellet, right onto a piping hot flattop. Go super smoke until it hits about 115. I've read I can get it to 500-550, but dont know firsthand. My plan is to reverse sear, as mentioned above.How hot can you get those flat tops? I've never used one as im a charcoal guy.
I had an evo years ago and sold it because it was a massive pain to clean. The one time I have cooked on a blackstone (breakfast burritos), it was much easier to clean. The circular grease trap on the evo is a terrible design.I'm glad I bought the smallest blackstone to try out, not a huge fan. Its fine for everything you guys mentioned, but I don't cook huge batches of stuff so it's just as effective to use a skillet inside. I hate cleaning that greasy MFer.
