I biked 10 days from Edinburgh around the borderlands with England. Edinburgh is don't miss and could be several days. don't miss the castle. The Royal Mile is nearby for shopping, eating, and drinking. Holyroodhouse is good.
I liked Dunbar (35mi east) and Tantalon Castle ruins are nearby as well as an airforce museum w/ Concord. Cove Harbor, cool port 10mi S of Dunbar with a hand hewn tunnel.
Kelso, town on the Tweed river (really pretty) with Smailholm castle nearby.
Innerleithan was another cool town. Traquair House just S of town is estate that Cromwell missed. Awesome brewery with tastings. The Jacobite and 160 shilling were incredible. Had the Jacobite that I saved for a couple days until I got back to Edinburgh and toasted the trip with a pizza from Palmyra on the balcony.
There's statue of William Walace between Smaiholm castle and Melrose. Little bit of a walk (1/2 mile IIRC)
Have fun and save a day or two to checkout out of the way spots -
