Brisket. Neighbors are doing Ribs Burgers and Hot Dogs. I am going to make the specialty drink on request but the drink of the day is Blantons on the Rocks. Are you proud of me 360?

Pulled the 22-lb brisket off the smoker at 5AM after 13 hours cooking. It's now in the oven foil boated and holding at 155F for 10-12 hours. Will serve with baked beans and grilled 'Murican corn.

For transporting us beyond Seas to be tried for pretended offences:

He has constrained our fellow Citizens taken Captive on the high Seas to bear Arms against their Country, to become the executioners of their friends and Brethren, or to fall themselves by their Hands.
He has excited domestic insurrections amongst us, and has endeavoured to bring on the inhabitants of our frontiers, the merciless Indian Savages, whose known rule of warfare, is an undistinguished destruction of all ages, sexes and conditions.
In every stage of these Oppressions We have Petitioned for Redress in the most humble terms: Our repeated Petitions have been answered only by repeated injury. A Prince, whose character is thus marked by every act which may define a Tyrant, is unfit to be the ruler of a free people.

Nor have We been wanting in attentions to our Brittish brethren. We have warned them from time to time of attempts by their legislature to extend an unwarrantable jurisdiction over us. We have reminded them of the circumstances of our emigration and settlement here. We have appealed to their native justice and magnanimity, and we have conjured them by the ties of our common kindred to disavow these usurpations, which, would inevitably interrupt our connections and correspondence. They too have been deaf to the voice of justice and of consanguinity. We, therefore, the Representatives of the united States of America, in General Congress, Assembled, appealing to the Supreme Judge of the world for the rectitude of our intentions, do, in the Name, and by Authority of the good People of these Colonies, solemnly publish and declare, That these United Colonies are, and of Right ought to be Free and Independent States; that they are Absolved from all Allegiance to the British Crown, and that all political connection between them and the State of Great Britain, is and ought to be totally dissolved; and that as Free and Independent States, they have full Power to levy War, conclude Peace, contract Alliances, establish Commerce, and to do all other Acts and Things which Independent States may of right do. I am making a rack of ribs, but it isnt going on the grill. I am doing sous vide. Will finish in the oven for abiut 10 minutes at 450.

12 hours at 165 degrees. I lut dry rub and liquid smoke in the vacuum seal bags

Yes I have done sous vide with ribs. Very tender. I have usually cooked for longer. Up to 36 hours before but I was reading to get them to fall off the bone it needs to be around 160-165 for about 12 hours to break down some of the proteins.

Sous vide is completely idiot proof. You literally cant mess up, unless you try. If you do a steak, you cook it for a few hours then finish on a sear zone or a frying pan on high. You'll cook it to the exact level of doneness no matter how long you cook (provided you cook it long enough to get it to the level of doneness you want). Whether you cook it for 2 hours or 4 really doesnt matter.

Not a thread hijack but wife and I have gotten a kick out of some of our World Cup visitors' great reactions to American food and eating places . Hope they all get a taste of our traditional 4th of July favorites .
For me; BBQ Baby backs , loaded baked beans , spicy potato salad , blueberry cobbler and ice cream , cold Guinness

Whether you cook it for 2 hours or 4 really doesnt matter.
I’ve done steaks before, just not ribs. May have to try it out some time.

I'll say it, fall of the bone ribs means they are ruined. Might as well have a well done steak instead.

Put a split hog on the pit at 200 degrees yesterday at 8am. Two racks of St. Louis cut ribs with burgers and hotdogs for the evening. Pulled the hog at about 10 this morning. Had a big gathering with everyone bringing sides for lunch today. I’m cooling off and letting everybody take home the leftovers. Epic nap is on the way. Happy Independence Day guys.

To break down the connective tissue for tender ribs they need to hit around 205. Same for pulled pork.

Roasted, then pan-seared 2" thick Prime Ribeye Cap steaks last night. Yes, they were damn good!

For those who may not know, the cap is the part of the Ribeye steak that is the strip of extra-tender & flavorful outer muscle. Take strips of that part, spiral them into a steak and bind together with butcher's twine for cooking.

You get the best flavor and marbling of a ribeye with the tenderness of a filet mignon.
