If in New Paltz’s, eat at Garvan’s Gastropub. Divine!If you are heading north on NYS Thruway, and you enjoy hiking or climbing, I would suggest Lake Minnewaska off of the New Paltz exit. New Paltz is a pleasant village with good eateries and quaint shops. A few exits up (Saugerties) you can take a short detour to Woodstock. The village that gave the concert its name. Interestingly, the concert was not held there due to local opposition once the plans became public. Nonetheless, Woodstock is a step back into the 60s and lots of artsy and colorful scenes (and characters who never left the 60s). I agree with the Saratoga suggestion and the city itself is packed with great restaurants and unique shops.
