At least I made an absolutely delicious Brisket today

I have a Masterbuilt wifi smoker that never really worked well. I got it 3 years ago. It always registered about 15 to 20 degrees hotter than it was according to an oven thermometer. The controller board went bad this year and I ordered a replacement. The board has spots for 4 temp probes but it only came with one. Masterbuilt didn't have extra ones available and ones for other smokers wouldn't work.

So this was the first time using the new board. I also finally found, on Amazon, additional temp probes for my model. I seasoned the brisket overnight. It was just a 4lb flat. I put two probes into it to test the new one.

First thing is I connected to it immediately on Wi-Fi which never happened with the old controller. I set it to 265 like I used to have to and put on the brisket. I used applewood chips for the smoke. When it got to temperature, I looked at the oven thermometer and it was actually at 265. I had to bump it down to 250. Both probes worked and showed the same meat temp. I foiled it at 185 and cooked it to 203. It came out so good.

So at least I have that going for me.

Pro tip
If your connected grill wont connect to your wireless, it is usually because it wants the 2.4gHz vs the 5. If you roll it to the outer edge of your wifi coverage to do the setup, it will complete and youll never have the issue again

Brisket is my Tn Baseball, I’m better than it is but sometimes you wouldn’t know it! Seriously brisket is my Achilles, sometimes I can cook it perfectly and the next time I do the exact same thing and get shoe leather. I don’t cook it enough to figure it out although I love eating it.
