Then recently said no to week 1 or 2 next season. If Carmel don’t play national week 1 or 2 expect them and Rita to play. I don’t see either school saying no to that

I see the POV of SR not wanting to get pummeled again by their rival, which can hurt recruiting and make it harder to get the "five" wins. That's been my attitude as of late.
However, I understand your POV as well along with only needing 3/4 wins to get into the playoffs.
It also gives the SR staff the standard of what a champion looks like. Aim to that level, and even if you don't truly reach it, you may still improve to the point where you're down 9 - 0 in a state championship game, with a golden opportunity to make it 9 - 7 with 6:00 mins to go.

Don’t see naz supporters crying about their years going 5-4 or 4-5 and making runs to win state. Yes Rita fell short, but running away from the best competition does nothing for them in terms of getting them ready for the state playoffs.

A very tough Green schedule with a crossover against a Blue opponent does prepare a team for the playoffs. I had no issues with Marist or Sandburg being scheduled in previous years.
Under the five-win threshold, I'd rather have a schedule that would favor Rita making the playoffs every year than worry about playing the best competition and taking chances on making the playoffs. My point is: Rita already has a tough schedule. A tomato can during Week 1 isn't going to hurt Rita's chances.
By playing a little weaker schedule, five wins will be a thing of the past. I do get your point, though. Since '19, program's been achieving really great results. I still can' t find Rice full schedule but I know they play LWE in week 1 and then St Francis in week 3 and Marist in week 9 - so perhaps Rice week 2 is still open and they can play Rita?According to St. Rita's website, there are no Weeks 1 & 2 games scheduled, yet.
