    Salsa recipe?

Arm yourself with some limes (for juice), some diced red onion, and some fresh cilantro, and you will be prepared to go forth into the world of salsa. A conventional approach would involve tomatoes (great time of year for them), but why not take advantage of the season and use peaches? Mangos...

Easy and classic Roman pasta recipe....Cacio e Pepe

"Less is more" is fundamental to real Italian cooking. Keep it fresh, and limit the number of flavors involved. This time of year, with the tomatoes good and fresh, you can make a killer pasta with just three ingredients in the sauce. Chop some fresh tomatoes, and saute them with the best...

    Canaan Valley Restaurants?

Siriani's also has a "satellite" operation in the Valley proper, basically across the street from the Valley Store. The pizza is as good as served at the one in Davis. There is a decent place at the cross country lodge; can't think of the name. Sort of a "hippie" vibe, but decent food.

    Himalayan Salt Blocks

Nothing to see. I have Himalayan pink salt that I picked up in Canada this past winter. It's pretty nice. I'm a bit of a snob, when it comes to salt. I have Fleur de Sel from Brittany, but I'll tell you what. It may just be my Kanawha County roots sticking out, but that Dickenson salt that BCM...

Forgot there was some crushed pepper in the brine. It might have been Hatch. I have so many, I can't remember.

Do you guys use finishing salts?

Nice, BCM! I use it a lot, and will definitely try this. Salt was one of the very first things that brought European people to what is now West Virginia. Salt works on the Kanawha River had importance in the geo-politics of the 17th Century, and the jockeying between Great Britain and France...

52 recipes in 52 weeks part 2: #27 Steak Quesadillas

Re: #28: Chicken tortilla soup Tortilla soup (or Posole) is one of my all-time favorites. I would suggest augmenting that recipe by adding a teaspoon of cumin and around 4 chipotle chilis in adobo, minced, to the broth, along with some canned white hominy (rinsed), canned black beans and corn...

I know people hat Guy Fieri..

Impossible to go wrong with those pork products, no? I offer no opinion on the guy. I sort of know who he is, but don't watch anything he does.

Any of you guys able to get any hatch peppers?

I use a lot of ground Hatch powder that I obtain online from a Chili store in Santa Fe. Good stuff. Makes a wonderful enchilada sauce. The Nambe is even better, if harder to find. Out of this world.
