    I use multiple meats for the difference in textures...chuck...brisket...ribeye...course ground beef probably a healthy 60/40 I grind myself...short rib and the secret ingredient is sliced smoked bratwurst...it adds a smokey undertone....cost about $ 100.00 a gallon (blue)
