    Tell me if this idea is wild or offā€¦ I got a prime ~4lb rib roast. Coated in kosher salt, black pepper, and garlic. Been uncovered in the fridge on a rack on a sheet pan for about a day. my thought is to cover that in tallow and kinders prime steak seasoning and herbs de Provence tonight...
